Oils have a high carbon and hydrogen content and are nonpolar substances. The general definition above includes compound classes with otherwise unrelated chemical structures, properties and uses, including vegetable oils, petrochemical oils, and volatile essential oils. All oils can be traced back to organic sources. Gas is one of three classical states of matter. Near absolute zero, a substance exists as a solid. A gas mixture would contain a variety of pure gases much like the air. What distinguishes a gas from liquids and solids is the vast separation of the individual gas particles. This separation usually makes a colorless gas invisible to the human observer.
