Volatility in forex is not something that is constant. There are pairs which are less volatile and ones that are more so, but the liquidity in general helps the market stay less volatile. Of course, during the pandemic the market has been more volatile than normal.

It is definitely wise to choose a regulated broker if you want to make sure your money is safe. If you choose an unregulated broker, there are less guarantees, although even these seem to have an appeal to some traders. -
Low spreads are definitely a great choice, but you should also look at the commissions/fees a broker takes. If the spreads are tight but the fees are high, you might not be better off, though it also depend on the time frame you trade.
